Chia Seed Pudding with Matcha Lavender Almond Butter
Just like so many of my other recipes on here, you can use any of our six flavours of almond butters with this one… It’s literally just adding a spoonful (or two) to your deliciously crafted chia seed pudding, and it makes allll the difference! This recipe is easy, filling, and packed with all the goods.
Here how to do it..
What you need:
-4 tbsp chia seeds
-1 cup plant-based milk (I use almond but coconut is amazing too!)
-1/4 tsp vanilla extract
-OPTIONAL- 1 tbsp maple syrup, honey, or agave
-However much almond butter you want!
What to do:
-Whisk together all ingredients, except almond butter, in a bowl or mason jar until everything is incorporated.
-Let the mixture six in the fridge for at least 10 minutes, give it a good stir again, then place back in the fridge for at least another 20 minutes.
-By this time, the mixture should have a “pudding-like” consistency, however the longer you let it sit, the thicker it will get! But if you’re like me and can’t wait any longer, this amount of time in the fridge will do.
-Through some in a small bowl, add some matcha lavender almond butter (or flavour of your choice) and mix it into the pudding.
-You can also add any toppings that you’d like! (I like fresh berries and granola)
