Matcha Lavender Chocolate Chip Cookies

Ok… These are hands down the TASTIEST almond butter cookies ever. And they only require FIVE ingredients!! I used matcha lavender almond butter but any of our flavours would work perfectly. The best part… they only take 20 minutes to make and one bowl!

Prep time: 5 minutes

Cook time: 8-9 minutes

Total time: 14 minutes

Makes ~ 8 cookies

What you need…

-1/2 cup Matcha Lavender almond butter (or flavour of choice)

-1/4 cup coconut sugar

-1 teaspoon ground flax mixed with 1.5 tbsp of water

-1/2 tsp baking soda

-1/4 cup dairy free chocolate chips

What to do…

-Preheat oven to 350 F and line a baking sheet with parchment paper.

-Prepare your flax “egg” by mixing together the flax and water.

-In a medium bowl, mix together almond butter, coconut sugar, flax, and baking soda.

-Fold in chocolate chips.

-Measure a teaspoon of the dough and place onto the parchment paper and flatten slightly with your hand or back of the spoon. Continue until there’s no dough left.

-Bake for 8-9 minutes.

-Let the cookies cool before removing them from the baking sheet (if you remove them too early, they could crumble)

-Enjoy!
